Amlou with spirulina
Ingredients
- 1 good handful of skin-on almonds (80 g)
- 3 tbsp culinary (roasted) argan oil (≈ 45 ml, 40 g)
- 1 heaped tbsp honey (25 g)
- 1 pinch of fine salt (0.5 g)
Our house amlou with a green touch: roasted almonds, argan oil and honey. For the ftour bread, msemen or harcha.
Method
- Dry-roast the almonds in a frying pan over medium heat for 6 to 8 minutes, stirring. Let them cool completely.
- Grind the almonds into a paste (amlou mill, blender or food processor), scraping down the sides.
- Add the argan oil little by little, then the honey and salt. Mix until you have a smooth paste that slowly runs off the spoon.
- Set the children's share aside, without spirulina, in a small bowl: 2 tablespoons (≈ 35 g) per child.
- Crush 2 spirulina tablets per adult portion into a very fine powder (in a mortar or between two spoons) and stir them into the rest of the amlou, at room temperature, until the colour is even.
- Serve with bread, msemen or harcha. Keep in the fridge in a closed jar.
Kids' version
Plain amlou, without spirulina, set aside at step 4. Honey is not given to babies under one year old.
