Orange meskouta with a Lingzhi Coffee glaze

4 portions (1 small loaf of 8 slices, 2 slices per portion)Time : 25 min + 35 min baking + 45 min cooling

Ingredients

  • 2 eggs at room temperature (≈ 110 g without shell)
  • ½ cup caster sugar (100 g)
  • 1 sachet of vanilla sugar labelled alcohol-free (7.5 g), or the seeds of ½ vanilla bean
  • The zest of 1 well-washed orange
  • ⅓ cup sunflower oil (80 ml, ≈ 75 g)
  • ⅓ cup fresh orange juice (80 ml)
  • 1 cup + 2 tbsp flour (160 g)
  • 2 level tsp baking powder (8 g)
  • 1 pinch of salt
  • For the glaze: 2 tbsp honey (40 g) and 2 tbsp orange juice (30 ml)
  • For the top: 2 tbsp flaked almonds (15 g) and 8 whole roasted almonds (≈ 10 g)
  • A little butter and flour for the tin

The Friday-afternoon cake: a light, fluffy orange meskouta under a glossy honey and coffee glaze, caramel in colour, with toasted almonds.

Method

  1. Preheat the oven to 180 °C (top and bottom heat). Butter and flour a loaf tin of about 20 × 10 cm. For the children, get 2 muffin cases ready, in a muffin tin or doubled up (one case inside another) on the baking tray.
  2. Whisk the eggs, sugar, vanilla sugar and orange zest for 5 minutes with an electric whisk, until pale and doubled in volume.
  3. Still whisking, on low speed, pour in the oil in a thin stream, then the orange juice.
  4. Sift the flour, baking powder and salt over the bowl. Fold in with a spatula in 2 or 3 additions, lifting the batter, just until no flour is visible.
  5. Set the children's share aside: spoon 2 heaped tablespoons of batter (≈ 30 g) into each of the 2 muffin cases. These mini muffins are never glazed: no coffee for children.
  6. Pour the rest of the batter into the loaf tin. Bake on the middle shelf: the mini muffins for 12 to 15 minutes, the loaf for 30 to 35 minutes, until a wooden skewer comes out of the centre dry.
  7. Leave the loaf in its tin for 10 minutes, then turn it out onto a rack. Let it cool for about 45 minutes: the top should feel just lukewarm (40 °C or less). Any warmer, and the glaze runs off and soaks in instead of staying as a glossy layer.
  8. Meanwhile, toast the flaked almonds in a dry frying pan for 2 to 3 minutes and let them cool.
  9. Make the glaze: warm the honey and orange juice (10 to 15 seconds in the microwave or over a pan of hot water: lukewarm, not hot, about 40 °C). Add the 2 sachets of DXN Lingzhi Coffee 3 in 1 and stir for 1 to 2 minutes, until the powder has dissolved and the glaze is smooth and glossy. Too thick: add 1 tsp more orange juice.
  10. Pour the glaze over the top of the lukewarm loaf and spread it to the edges with the back of a spoon. Scatter over the flaked almonds, then place one whole almond every 2.5 cm: one almond = one adult slice, and the cutting lines are marked.
  11. Let the glaze set for 15 minutes, then cut 8 slices. The loaf keeps for 3 days under a cake dome.

Kids' version

The 2 mini muffins are poured at step 5, before any DXN product, and baked without glaze. Another way, without mini muffins: at step 10, cut the loaf in two, move the halves apart on the rack and glaze only one half, with just 1 sachet and half the glaze (1 tbsp honey and 1 tbsp orange juice). The children's half stays plain, with no almond on top. No coffee for children.

The marker almond

The adult slices, glazed with coffee, each carry one whole almond. The children's mini muffins and plain half have no glaze and no almond. Serve the children first, then cut the adult slices.

How many portions in a pack?

DXN Lingzhi Coffee 3 in 1: 20 sachets = 10 glazed meskoutas (2 sachets per loaf of 4 portions), or 20 cups of coffee.
