Sellou with DXN RG capsules
Ingredients
- ½ cup flour (70 g)
- 1 handful of skin-on almonds (70 g)
- 3 tbsp sesame seeds (35 g)
- 2 tbsp icing sugar (20 g)
- 1 heaped tbsp melted unsalted butter (20 g)
- 1 tbsp olive oil (10 g)
- 1 level tsp ground green anise (2 g)
- ½ tsp ground cinnamon (1 g)
- 2 to 3 grains of mastic (meska horra), pounded with 1 pinch of sugar (≈ 0.3 g)
Ramadan sellou, sandy and scented with anise. The powder from the RG capsules goes in only at the very end, once the sellou is completely cold.
Method
- Dry-toast the flour in a heavy-based frying pan over low heat for 15 to 20 minutes, stirring all the time, until it is a pale golden colour. Sift and let it cool.
- Roast the almonds (oven at 180 °C for 10 to 12 minutes, or in the pan) and the sesame (pan, 3 to 4 minutes). Let them cool, then grind them finely, separately.
- In a large dish, mix the flour, almonds, sesame, icing sugar, anise, cinnamon and mastic.
- Add the melted butter and the olive oil. Rub together with your fingertips until the sellou is sandy and holds its shape when pressed in your hand.
- Let it cool completely, at room temperature.
- Set the children's share aside, without RG: 3 tablespoons (≈ 55 g) per child.
- Open 2 capsules per adult portion (8 for 4 portions) over the dish: pour in the powder only and throw away the empty shells. Mix for a long time so the powder is evenly spread.
- Serve in small domes or balls. Keep in an airtight box.
Kids' version
Plain sellou, without RG, set aside at step 6.
