Orange blossom and date verrines with DXN Reishi Gano Tea

4 verrines (about 150 ml each)Time : 25 min + 2 h in the fridge

Ingredients

  • 500 ml whole milk (≈ 515 g)
  • 4 tbsp sugar (50 g)
  • 4 egg yolks (≈ 70 g)
  • 4 level tbsp cornflour, Maïzena (32 g)
  • 4 tsp orange blossom water (20 ml)
  • 4 soft Mejhoul dates, pitted (≈ 80 g)
  • 2 tbsp unsalted pistachios, finely chopped (20 g)
  • Up to 4 whole roasted almonds, one per adult verrine

A soft, smooth cream scented with orange blossom, on a bed of soft dates, with green pistachios on top. On the adult side, the milk is steeped with DXN Reishi Gano Tea, which gives an ivory cream with notes of tea. No gelatin: the cream sets with cornflour and egg yolk.

Method

  1. Cut the dates into small dice and divide them between the bottoms of the 4 verrines.
  2. Heat the milk over medium heat until it steams and small bubbles appear at the edge (about 85 °C), without letting it boil. Take it off the heat.
  3. Set the children's milk aside, before the tea: pour 125 ml of hot milk per child's verrine into a second small saucepan.
  4. Put 1 sachet of DXN Reishi Gano Tea per adult verrine into the remaining milk (4 if all 4 verrines are for adults). Cover and steep for 5 minutes off the heat, then lift out the sachets, pressing them gently against the side with a spoon. If your pack holds a powder rather than infusion sachets, whisk it straight into the milk.
  5. Prepare one bowl per saucepan with, for each verrine: 1 egg yolk, 1 tbsp sugar and 1 level tbsp cornflour. Whisk until pale, then pour over a little of the milk from the matching saucepan, whisking.
  6. Pour each mixture back into its saucepan. Cook over low to medium heat, whisking all the time, until the cream thickens and coats the spoon, then let it bubble gently for 1 minute, still whisking: this is when the cornflour really sets. Start with the children's saucepan, then wash the whisk before the adults' one.
  7. Off the heat, stir 1 tsp orange blossom water per verrine into each saucepan.
  8. Pour the children's cream over the dates in their verrines, then the adults' cream into the others. Cover with cling film touching the cream, so no skin forms.
  9. Let them cool to lukewarm, then chill for 2 hours. To serve, scatter over the chopped pistachios; on each adult verrine, also place one whole almond in the centre.

Kids' version

The children's milk is set aside at step 3, before the tea: the same cream, dates and pistachios, with no tea and no DXN product, and no almond on top. For the youngest, chop the pistachios very finely.

The marker almond

The adult verrines, with DXN Reishi Gano Tea, carry one whole almond in the centre. The children's verrines have only the chopped pistachios. Keep them in two separate rows in the fridge.

How many portions in a pack?

DXN Reishi Gano Tea: 20 sachets ÷ 1 = 20 adult verrines, or this recipe for 4 made 5 times, or 20 glasses of tea.

Do not exceed the amount shown on the pack, counting everything you take during the day.

Who should ask a doctor first?

  • Pregnant or breastfeeding women.
  • Children: their verrines are made with no tea and no DXN product.
  • People taking medicines or other supplements.
  • People sensitive to caffeine (coffee and tea).
